Homemade “Store Bought” Salsa

  • 1/2 large onion coarsely chopped
  • 1 small handful chopped cilantro
  • 1 or 2 jalapeño, seeded and coarsely chopped
  • 1 t salt or to taste
  • 1 t red wine vinegar
  • pinch of sugar
  • 1 T tomato paste or to taste
  • 1 28 oz can whole peeled tomatoes broken up with hands and drained (save the juice in case needed later, not Italian style)
  • lime juice to taste
  1. In a food processor pulse onion, cilantro, jalapeño, salt, vinegar, sugar, tomato paste until coarsely chopped.
  2. Add whole tomatoes and pulse again until desired consistency.
  3. Add lime juice and more salt if desired to taste.
