Basic black beans for general use.
- 1 lb dry black beans
- salt to taste
- Place beans in a large pot and add 8 or more cups of cold water to submerge beans.
- Rest 10 minutes.
- Bring to boil and boil for 20 minutes.
- Remove from heat and let stand until ready to cook.
- Bring to boil.
- Reduce heat and simmer covered until beans are tender.
- Salt to taste.
